About the Event
What You’ll Do
Pilau is a rice dish cooked with meat and lots of spices such as cumin, coriander, cinnamon, cloves and nutmeg. Many communities in East Africa have variations of this dish. The pilau will be accompanied by kachumbari, a salad made with onions, tomatoes, lemon and sometimes fresh chillies.
- Learn how to cook pilau na kachumbari
- Learn how to prepare the spice mix from scratch
- Learn how to make kachumbari salad
What You’ll  Need
Cooking Appliances
- Chopping boardÂ
- KnifeÂ
- Bowls for ingredients
- Small frying pan for roasting spices
- Medium size pot for cooking the rice
- One wooden spoon to stir the rice while cooking
- Mortar and pestle but you can also use an electric spice grinder (I use a coffee grinder for spices)
- Blender if you want to blend the yoghurt dip with chilliÂ
Cooking Ingredients
- basmati rice or any long-grained rice
- diced lamb. Alternatively you can use vegetables or chicken
- cloves of garlic
- ginger
- onion
- tomatoes
- lemon
- coriander
- yoghurt
- green chilli
- cooking oil
- salt & pepper
Spices
- cinnamon stick
- cloves
- black pepper corns
- cardamom pods
- cumin seeds
- coriander seeds
